How is Our Umeshu different?
Together with local farmers in Oyama, we carefully cultivate our plums with patience and devotion, then hand-pick each one at the harvesting season.
After harvesting, every plum is inspected by human eyes, and only those free from blemishes are carefully selected. The chosen fruit is then placed into tanks for umeshu on the very same day.
Harvesting, selection, and preparation — every step is carried out by hand, in the same place, within the same day.
This meticulous handcraft, preserving the freshness and delicate aroma of the plums just as they are, is the uncompromising dedication that makes our umeshu brewery truly unique.
3年熟成 南高梅のこだわり梅酒
3-Year-Aged Nanko Umeshu
Crafted from carefully selected Nanko plums (南高梅) grown under the generous sunshine of Oyama, this umeshu is patiently steeped for one year before the fruit is removed, then further matured for two more years.
Wonderfully fruity yet remarkably clean on the finish, it offers a beautifully balanced harmony of sweetness, acidity, and delicate plum aroma. Its mellow texture and graceful character make every sip as enjoyable as the last.
With its soft amber hue and gentle sweetness, it is an ideal aperitif, pairing beautifully with Japanese cuisine.
Equally delightful served over ice or with soda, its smooth, approachable character also makes it a pleasure to enjoy neat.

3年熟成ゆめひびき
3-Year-Aged "Yumehibiki"
Crafted with locally grown Oshukubai plums (鶯宿梅), a variety rich in plum essence and exceptionally suited to umeshu making, this uncompromising expression is matured for three years.
The deeply extracted plum essence draws out the fruit’s full fragrance and a rich, concentrated depth of flavor, lending this authentic umeshu a quiet sense of refinement.
Best enjoyed first tasting it neat, allowing the fullness of the plum to unfold across the palate, before enjoying it over ice or with soda. For a more unexpected expression, it may also be paired with beer, where its gentle sweetness and the beer’s subtle bitterness come together in a beautifully intriguing harmony.

樽仕込高級梅酒「ゆめひびき」
5-Year-Aged Barrel "Yumehibiki"
3-Year-Aged “Yumehibiki”, made from “Oshukubai” plums highly regarded for umeshu making and locally grown in Oyama, Oita Prefecture. It is then transferred to white oak casks once used to mature Nikka Whisky, where it rests for a further two years.
From the cask comes a refined fragrance of whisky and oak, beautifully woven into the deep, mellow character of aged umeshu.
Its distinguished character has earned a place aboard "Seven Stars in Kyushu", Japan’s most prestigious luxury train.
A masterpiece worthy of the name: “Umeshu beyond Umeshu.”
